spice crusted salmon (page 125) with mango salsa (page 189)

Mango Salsa - this is great side for a summer dish and it can be prepared ahead of time
Serves: 2 - lets hope so
Prep: 15 mins - took me 20 mins inclusive of nine interruptions and one tantrum


Spice Crusted Salmon - again a great dish that be prepared ahead and left marinating
Serves: 2 - might have to come up with a dessert?
Prep: 20 mins (plus 10 mins marinating time) - took 25 mins which included 6 interruptions, cooking the kids dinner and a brief family visit to the herb garden, now just letting it marinate while waiting for the husband to get home from the pub...


Cook: 12 mins
Variants: used brown sugar as have no idea what muscovado sugar is and I added some green beans to help satisfy a hungry hubby


Verdict: easy to prepare, deliciously light and fruity with a zing and surprisingly very filling, would cook this again
